Palak Paneer recipe

Palak paneer is a vegetarian dish introduce from India.

Palak Paneer Ingredients:-

2 bunches of Spinach (washed and blanched)
300 gms Paneer
¼ cup tomato chopped
1 tsp. Turmeric
3 red chillies dried whole
Salt as required
3 tbsp. Garlic chopped
1 tsp. Cumin seeds
5 tbsp. Ghee
½ cup red onions chopped

let's get cracking with palak paneer from Indian home kitchens the base of palak paneer recipe is a puree of pollock or spinach so let's make that first I've kept some water to boil to which I'm adding some table salt and to this, I'll be adding in washed palak leaves spinach is an amazing source of fiber and protein we need to get the color right of this recipe and that's immensely important this step is technically called blanching and improves the final look and color of the recipe as soon as the leaves of spinach are blanched. 
We need to transfer this into chilled water this will stop and arrest the cooking further the palak leaves have cooled off completely we need to drain these now and grind it into a fine puree to this. I will be adding in some water and that could assist in grinding this, final a blanched Palak puree is ready. 
Let's now move on to the Tadka for this I'm heating a pan and to this, I'll be adding in some ghee well you could also use a mixture of butter and ghee but I personally love the flavor of ghee while this is heating up let's quickly chop some red onions the onions are cut and ready that he has also heated up the first thing that goes in this is some cumin seeds, once these crackles Aladin, dried red chilies, well I prefer using red chilies for it's nice flavor. Alternately you could also use slit green chilies, once these get lightly toasted Aladin, chopped garlic and this time lots of it. Once this turns a little nutty and golden-brown I'll add in the chopped onions to this I'll be adding in some salt so that the onions cook faster.
spinach our green leafy vegetables which are naturally salted in flavor so make sure the quantity of salt is absolutely in check, once the onions turn lightly golden brown in color Aladin turmeric powder and along with this chopped tomatoes .let's give this a mixed time to add powder garam masala. we need to stir-fry this mixture on high flame for 2 to 3 minutes. 
    If you've noticed I have deliberately not added red chili powder because I do not want the color of the palak paneer to change once this mixture is nicely cooked Aladin the Palak puree give this a mix and we need to adjust the consistency with some water. 

Now allow us to boil on high flame for 3 to 4 minutes at this stage you can also add in some cream or some butter if you need to make this ritual but I personally prefer it like so.
while this is cooking let's dice paneer or cottage cheese I transfer the pieces of paneer in the bubbling gravy alternately you could also deep fry the paneer pieces and add to the gravy with this your palak paneer is ready. 
     Do try this with some roti, none of the full cos.


Very short method of Palak Paneer 

(Spinach Cheese)

Ingredients for making spinach cheese: -

For spinach paste: -

Spinach: a poultry
Ginger: 1 inch
Garlic: 8-10 grains
Green chili: 3
Water: 4-5 cups
Salt: 1/2 teaspoon

Rest of material:

Oil: 25 grams (4 teaspoons)
Butter: 1 teaspoon
Paneer: 10-12 pieces
Cumin: 1 teaspoon
Cinnamon: 1 inch
Long (Cloves): 3-4 grains
Cardamom: 2 grains
Bay Leaf: 1
Dry fenugreek leaf: 1 teaspoon
Onion (Onoin): 1 (chopped)
Tomato: 1 (chopped)
Water: 1/2 cup
Salt: 1 teaspoon (to taste)
Garam masala: 1 teaspoon
Cream (Creem): 50 grams

Palak Paneer Method :

1. First remove the stalk of spinach, then wash the spinach and wash it well.
2. Then put spinach and 5 cups of water and a little salt in a pan and boil it for 2 minutes.
3. Turn off the gas after 2 minutes and leave it to cool for 5 minutes.
4. Now filter it and put it in a mixer jar to make a paste.
5. And add ginger garlic and green chillies and make a paste.
6. And here we have made a paste.
7. Now we'll put a pan on the gas and put butter in it.
8. After the butter melts, add the paneer pieces and fry them lightly on low heat.
9. Then add oil to it and after heating, add cumin, cinnamon, long, small cardamom and kasoori methi.
10. Then add the onion to it and roast it.
11. Then add the spinach paste and roast it for a while.
12. Then add the fried paneer in it and if the spinach gravy is too thick then add some water and cook it for 5-7 minutes.
13. Then add salt, hot masala and cream, mix it and turn off the gas.
And our paneer is ready.
